Mapping Colonization Through Food

For my thesis at Pratt Institute I wanted to trace the roots of food across different countries in the Middle East and South Asia and see the role colonialism played in this. Through this pursuit and 2 semesters worth of research and making I produced 3 books and am continuing to work to produce 6 more.
